ZUCCHINI GINGER CHIKEN AND YELLOW DATE, PEAR SALAD

This is very simple and delicious recipe, for the zucchini lovers . Quick to make on a lazy morning, goes well with chapati or even alongside rice. Stir-frying not only ensures fresh flavor, it also means healthier food, as little oil is needed for cooking. And the dish, with its vivid golden color, looks as beautiful as it tastes.

cooking time 30 mnts

INGREDIENTS:-

  • 5 chiken thighs/ breast(500grms)
  • 4 medium zucchinis- cut into long
  • 2 inch ginger piece
  • salt
  • 1/2 tsp – chilli powder
  • 1/2 tsp pepper powder
  • 2 tsp olive oil
  • 1 tsp garam masala powder
  • 2 medium seized onions
  • fresh coriander leaves to garnish

METHOD:-

Cut and wash the chiken. Using boneless would be better . Take the drained chiken and sprinkle with salt and fresh pepper. Rub it well. Heat a non-stick frying pan with the olive oil, add the finely chopped onions and ginger. Fry for 2 minutes till the onions are soft  and then add the chiken. Cook for 9- 10 minutes untill the chiken is tender and browned. Wash and cut the zucchini into thin long cuts. Add it to the chiken, Sprinkle chilli powder and garam masala powder. Taste and adjust the sesonings. Cook for 10 more minutes. Garnish with some fresh coriander leaves and lime wedges before serving. Serve hot with paratha,roti or it goes well with rice too.

YELLOW DATES AND PEAR SALAD

My husband recently bought a box full of yellow dates. I just love the fresh taste of them, though eating more of the unripe firm yellow dates, can give you an acidic mouth. The half ripe – half firm stage is the best to eat before they are fully ripened. So i made this refreshing light, crunchy salad brusting with the flavours. Walnuts give it that perfect nutty taste and really compliments the dates and pears.

INGREDIENTS:-

  • 2 cups yellow dates, pitted and halved
  • 2 medium pears, diced finely
  • 3 full cups lettuce- torn or roughly chopped
  • handful of tosted walnuts
  • 1/2 cup sprouts

METHOD:-

Mix and toss all the ingredients in a bowl. We did not use any dressing for this salad, if you wish you can make a light vinenaigrette. And drizzle just before serving.
