MUHALLABIA

This is a classic middle eastern dessert enjoyed by everyone on any occasion . It’s creamy and silky-smooth, and yet contains no cream, butter or eggs, and only a modest amount of sugar. Best of all, this traditional Moroccan pudding has the exotic taste of rose petals, a flavor seldom encountered in the Americas and Northern Europe, but common throughout North Africa and the Middle East. It’s also has few ingredients and is as quick and easy to make as breakfast porridge, so you can enjoy it almost any time. Its mostly like indian kheer but with the flavour of rose water.

INGREDIENTS:-

  • 1/2 cup rice flour
  • 1/2 cup plus 2 tablespoons superfine sugar
  • 4 cups whole milk
  • 2 tsp – ground almond powder
  • 2-3 tablespoons rosewater (orange flower water is nice too)
  • confectioners sugar for dusting (optional)
  • almonds/pistachios for garnish

METHOD:-

Dissolve rice flour in 2/3cup milk.Bring remaining milk to a boil with sugar.Once the milk starts bubbling,slowly pour in the rice flour solution and stir constantly till it achieves a thick custard consistency about 5-7mints.Turn off the heat and add  rose water,keep stirring for a few more minutes.Allow the mixture to cool and then pour into individual bowls and refrigerate until well chilled.Serve garnished with chopped pistachios…
