EGGLESS CUSTARD POWDER CAKE

Eggless custard powder cake can be enjoyed as a tea cake, simple birthday cake for your kids or as a snack cake. This comes with a refreshing yellow colour, a great taste and a wonderful soft,spongy texture and the heavenly smell. This cake does not require any icing.

Because it is eggless, the cake doesn’t bind together as well as a typical egg-filled cake. However, it still bakes up like a cake and because it uses so much custard powder, the cake pretty much dissolves on your tongue. Yum…….

This is my 2nd cake without any eggs. Iam not usually a fan of eggless cakes, but some months back, i strongly had this urge to bake something. And their were no eggs in my kitchen, so i browsed and came across this recipe. Iam glad to have tried it.

Eggless Custard Powder Cake

  • 1 1/2 cups all purpose flour
  • 3/4 cup vanilla flavored custard powder
  • 2 1/4 tsp baking powder
  • 3/4 cup sugar
  • 150 gm butter (softened)
  • 1 cup milk

METHOD:-

Preheat the oven to 350F. Grease and flour a small cake pan. Whisk all the dry ingredients together in a bowl. Add the milk and butter and mix well until smooth.  Pour into the prepared pan and bake about 30-35 minutes, until toothpick inserted comes out clean. Cool on a rack and serve.

NOTE:- Custard powder is not dried, powdered custard. It is actually a powdered mix used to make custard, and it is very similar to the type of mix used to make instant pudding in the US. Just combine it with milk, cook to thicken, and you have custard (or pudding)! It is easily available at indian grocery stores.

MANGO POMEGRANATE TRIFLE

We recently had some mangoes…..yah….even in these months. Like out of season fruits, they were not sweet ,so decided to combine them with sweet pomegranate airils and make a trifle. This healthy recipes works both as a light fruit dessert or as a healthy breakfast.

serves 2 as a breakfast,4-6 for dessert

INGREDIENTS:-

  • 1 large mango
  • 1 large pomegranate
  • 2 cups – greek youghrt
  • 2 tsp honey

METHOD:-
1. Peel the mango and blend in a chopper untill smooth.  Combine the greek yogurt with honey and keep aside. Cut the pomegranate and take out the airils.
2. Take small glass bowls, or  wide rimmed glasses. Place two spoonfuls of mango puree, layer yogurt and scatter some pomegranate airils.  Eat immediately within half an hour otherwise the yogurt may start to separate.
