Preparing the Parathas:

On a rolling board, take a medium size ball of the dough.
Just make a simple chapati…. .When the paratha is getting cooked on the griddle, you prepare another paratha and so on.
Heat the tava or griddle. Take the rolled paratha and keep it on the tava. Cook the parathas on a medium flame.Pour some oil or ghee on the sides of the paratha and let it cook till its ¾ cooked.
Pour 4-5 tbsp of the egg mixture on the paratha which is half cooked. You should be able to see brown spots on the paratha on both sides. Spread the egg mixture on one side of the paratha with the help of a spoon. Pour some oil or ghee on the egg mixture as well.Turn over. Now the egg mixture is getting cooked below.
Drizzle some oil or ghee on the sides.Flip and let the base cook for some seconds.Flip again and cook the egg mixture again.Once the egg paratha is cooked well… that is when it is browned well, the egg mixture has also browned and cooked – like an omlette.. then the parathas are done. Roll them into a roll if you are packing for lunch.
Serve the Egg Parathas with  pickle, chutney or any side dish ,if you wish.

oats smoothie-1

Perfect for busy mornings, or a light dinner if we already had some snacks , i make this oats smoothie ,which is very easy and filling. If its summer, and you want a cool smoothie, just keep the cooked oats in the freezer for 5 minutes and use.  Mostly i have made this with banana or apples(which are ever present in my kitchen) and  using ripe- dates instead of honey. Though this is the first time tired this smoothie using strawberries and it tasted very nice, cant even taste the oats in it.   This healthy smoothie is ready to drink in just 5-10 minutes.
serves 2
cooking time 5 mnts

  • 2 cups frozen/fresh strawberries
  • 1 cup milk
  • ½ cup quick cooking oats
  • 2 tsp honey

Cook oats and water in a small pot for about a minute or two, stirring often until it becomes thick and bubbly. Remove from heat and let it cool a few minutes.

Toss everything in the blender. If you like a thick smoothie add more oats but keep it at a ½ cup if you want to drink this with a straw. Blend all that  until it is all smooth . Blend on high until very smooth. Pour in a glass over ice. Enjoy!!

This is best if you make it and drink it right away. If you only need one serving, cook all the oatmeal in water as instructed below, but use only half of the cooked oatmeal in the blender and save the other half for the next day.
