Genoise cake is a classic Italian sponge cake named after the city of Genoa and closely associated with Italian and French cuisine. Instead of using chemical leavening(baking powder or soda) air is suspended in the batter through mixing to give volume to the cake. 


It is a whole-egg cake, unlike some other sponge cakes for which yolks and eggwhites are beaten separately. The eggs, and sometimes extra yolks, are beaten with sugar and heated at the same time using bain-marie or flame, to a stage known to patissiers as “ribbon stage”. A genoise is generally a fairly lean cake, using very little fat , getting most of it from egg yolks, but some recipes also add in a little melted butter before baking.


These cakes are infinately adaptable and can be filled with anything but should ideally be eaten within 24 hours of baking because the lack of fat means they do not store as ideally as other cakes.

 Vanilla Genoise Cake with Strawberry Frosting

  • 4 large eggs
  • 1/2  cup brown sugar
  • 1 cup whole wheat flour-sifted
  • 1 tsp vanilla essence
  • 3 tbsp unsalted melted butter
  • zest of finely grated lemon
For the Filling
  • 2 cups greek yoghrt
  • 2 tsp honey
  • 1 cup strawberries
  • vanilla extract


Preheat oven at 170C.
Grease the cake pan and dust with flour. Whisk together the eggs and sugar untill at least for 5 minutes untill thick,paled and doubled in volume.
Sift the flour and carefully fold into the mixture. Fold in vanilla, lemon zest and butter.
Put the batter into the cake pan and bake for 40 minutes untill the top is springy.
Once the cake is almost golden colour, remove from the oven and DO NOT insert the skewer as this might deflate the sponge. Cool the cake from the tin immediately onto the wire rack.Once the cake is compleatly cooled , cut horizontally into 3 equal parts carefully,using a serrated bread knife.

For the frosting, whisk the greek yogurt along with honey into thick and cremy, fold in the strawberries and vanila extract. Place it in the fridge to thicken it and fill the two layers with it.Dust the top layer of the cake with some fresh strawberries, powdered sugar and serve immediately.

Green onions, also known as scallions or spring onions, contain a wide variety of health-enhancing compounds like vitamins, minerals and phytochemicals. Use them raw in salads or cook them with other vegetables in stir-fries or sautes for an extra boost of nutrition.

Spring onions are a very popular vegetable and they come in different varieties including white, yellow and red. These tender onion bulbs are great in taste and also rich in nutrients. From a long time spring onions have been used in Chinese traditional medicines. Like onions ,spring onions are also high in sulfur. High amounts of sulfur provide many health benefits.

Spring onions are good for cardiovascular health. They lower the oxidation of cholesterol and reduce the risk of coronary heart disease. Sulfur compounds in this vegetable help in reducing and controlling blood pressure levels. Spring onions help to reduce cholesterol levels as well. The chromium content in spring onions provides health benefits of diabetics. It controls the blood sugar levels and improves glucose tolerance. Allyl propyl disulphide is also very helpful in lowering blood sugar levels. Anti-bacterial properties in it help to fight against cold and flu. Anti-bacterial properties also provide relief from digestive discomforts. Vitamin C in this vegetable boosts the immunity. Pectin (water-soluble colloidal carbohydrate) in spring onions reduces the chances of developing cancers especially colon cancer. Quercetin in spring onions provides anti-inflammatory and anti-histamine benefits. It’s a good vegetable for treating arthritis and asthma.  It is a good food for regulating metabolism and keeping macronutrients.  Spring onions are good against eye disease and eye problems.  Allicin in this vegetable is good for the skin as it protects from skin wrinkling.

Besides all of the above health benefits, spring onions are also good for speeding up blood circulation. They provide protection against fungal infections and works as an appetizer as well. Regular intake of spring onions is extremely good for the health as these can protect us from many health problems and diseases.

  • 2 large spring onion greens , roughly chopped
  • 2 large spring onion whites , sliced
  • 2 potatoes , sliced
  • 2 ripe tomatoes , chopped
  • 2 green chillies, chopped
  • 1 teaspoon Dried fenugreek leaves/ Kasuri Methi
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon  chilly powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoon olive oil
  • 1 1/2 cup water


Wash and cut spring onion green and white parts separetly. Heat olive oil in a cooking pan , add cumin seeds . After they splutter add spring onion white slices . Sauté and add potato slices , cook till a little tender and then add all spices and salt .
Mix well and add tomato and green chillies from the side of pan , cover it with potatoes and add spring onion green from top . Cook till oil comes out from the edges of pan .
Add water and let it simmer on low flame , cook for 5 minutes more or till you get desired consistency of curry. Sprinkle kasoori methi lastly on top . Garnish with more spring onion greens. Serve hot with rice,phulka or paratha.
