BANANA MASOOB

Malikia,as it is called in Yemen, or Masoub, as it is known in Saudi Arabia, is a slightly sweet banana-based breakfast dish made from a base of over-ripe bananas and ground flatbread. This is a very popular breakfast food here in the middle east and is very easy to make. Also it uses up leftover flatbreads(indian chapatis), pita bread or you could even use whole wheat bread slices.

Though at first glance this recipe does not look ,good enough to eat- it is very healthy, filling, my husband’s fav and my kids love this. To make this for kids, i just add 1/2 cup more of hot milk and omit the nuts. Don’t be fooled by what looks like a very modest portion size, there are 3 whole pita bread, 3 whole bananas, handful of almonds , cream and honey in the dish! ūüėČ

serves 2-3

making time:10 minutes

Ingredients
  • 3-4 very ripe bananas
  • 2-3 flatbreads
  • Sliced almonds- 10-15
  • Golden raisins/ dates – 1 tbls(optional)
  • fresh cream – 1 full tbls
  • Honey- 2 tsp
  • whole milk – 1/4 cup

METHOD:-
1.   Peel and mash the bananas by hand using a fork or using a mixer. Place aside in a medium sized bowl.
2.   Coarsely  dry grind the bread using a blender or food grinder. Then add to the banana mixture and mix until combined. The ratio of banana to bread should be about 50/50, with the mixture being slightly stiff so that it can be shaped nicely. Mix the milk if its too thick.
3.   Spoon the banana mixture into a serving dish and smooth out on top.
4.   Add the raisins, almonds, low fat fresh cream and honey on top of the banana mixture. Heat the masoob in the microwave for 30 seconds if desired.

    Loved this recipe! You can also use the banana masoub as a dessert – it is like a bread pudding. Another idea: you can stir in a lightly beaten egg then bake it in the microwave for 2 minutes. It then becomes a proper breakfast main dish!

      Sounds a great idea, love everything with eggs. Yes, this can be had as a dessert and to make it more healthy- fresh cream could be replaced with greek yoghrt too…..
