FRESH ORANGE CARROT SOUP

Velvety carrot soup with an exotic hint of orange and the spice from ginger is filled with antioxidants and is fat free too. Often the most nourishing foods are also the most simple and easy to make. This carrot orange soup comes just under that. All you need are some 5 ingredients and half an hour to bring this lovely soup to your table. I already have a carrot soup recipe in my blog which i often make but it uses potatoes and is good if you have just a handful of carrots or a large party to serve. But what if you have a bag of 8 pounds of carrots,sitting in your kitchen to be used up. So came across this lovely recipe. First time iam trying a soup – oil free.

serves 4 as a starter

cooking time;- 30 mnts

INGREDIENTS:-

  • 1 kg carrots/ 10 medium carrots
  • 1 large organic orange
  • 1 medium onion
  • 1 inch ginger
  • salt and pepper to taste
  • fresh cilantro to garnish

METHOD:-

Boil 2-3 glasses of water. While the water is boiling, peel and chop the carrots into chunks. Cut the onion and grate or crush the ginger and add it to the boiling water and simmer till the carrots are soft. It will take nearly 20 minutes. You can even add half the orange ring while the carrots are boiling, but its optional.  Squeeze the juice from the orange and keep aside. Switch off the stove. Let it cool down a bit before pureeing in a mixer or food processor. Blend untill smooth and creamy along with salt and pepper. Add the juice of 1 whole orange and blend. Heat it up again for a few minutes and serve hot garnished with fresh mint or coriander.
