Lamb kidney masala is a very easy, simple, quick(takes less than 20 minutes to make) and tasty side dish that goes along with parathas,roti,naan,rice,dosa,idli,aapam……etc. This is a very famous dish is south india. They take very less time to cook, if overcooked they will become hard and chewy.


If you are squeamish about eating organ meats, read about its health benefits. Lamb kidney has many health benefits, although it is high in cholestrol. They are known to be rich in protein and not very high in calories, contains high amounts of iron, Vitamin A, Folate,  B1 (Thiamine), B2 (Riboflavin), B5, B12 (that’s a lot of B12!!) and Vitamin C.


There are two types of iron in food: haem iron (found in meat and fish) and non-haem iron (found mainly in plants). Meat also contains some non-haem iron. The body absorbs the haem iron in meat much more efficiently than the non-haem iron in plant foods. For example 1/4 cup of cooked silverbeet contains 0.5mg of iron, but the body can only use about 5% of this. In comparison, 100g of cooked lean beef contains an average of 4.0mg of iron and the body absorbs around 25% of it. You would need to eat around 2kg of cooked silverbeet to get the same amount of iron provided by just 100g of lean meat.

  • 1 KG – lamb kidneys
  • 2 tsp – whole garam masala
  • 2 large onions – sliced
  • 2 tsp – ginger garlic paste
  • salt
  • 2 tsp – olive oil
  • 1 tsp- fresh garam masala powder
  • 1 tsp chilli powder
  • 3 – green chilies
  • handful of fresh cilantro
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • one large fresh lime



Clean, trim, wash Lamb’s kidneys with half a lemon rubbed over it(optional) and cut into bite-sized pieces. Dip in boiled water for 2 minutes, strain and keep aside. Heat oil in a thick-bottomed pan. Add the whole garam masala (bay leaves, cloves, Caraway seeds, Brown Cardamom) and fry for 4-5 seconds, till they splutter and emit and nice aroma. Add sliced onions and sauté till they turn golden brown in color. Add the ginger- garlic paste and chopped green chilies. Close the lid for a minute. Open and add coriander powder, red chili powder, turmeric powder and Stir well. Add kidney pieces and cook covered on medium heat till kidney pieces are almost done. Add salt and garam masala powder, cook without lid till all the water is evaporated and kidney masala is dry . Garnish with fresh chopped cilantro leaves and lemon juice.
