CREAMY RICE ORANGE PUDDING

INGREDIENTS:-

for the rice pudding –

  • 1\2 cup  rice
  • 1 cup water
  • 3 cup milk
  • zest of half orange
  • 1 tablespoon orange blossom water
  • 1\4 cup  sugar
  • 1 tablespoon  cream

for the orange cream

  • 2 cups fresh orange juice
  • 1\4 cup sugar
  • 1 1\2 tablespoon corn starch
  • 1 teaspoon orange blossom water

METHOD:-

Wash and soak the rice for at least half an hour prior to cooking.  Wash the orange, remove zest and keep aside. Place the rice, water,milk,sugar in a saucepan on medium to low heat and cook till the rice is almost done. Add the orange blossam water, zest of orange and keep stirring. Finally add the cream and simmer untill thickened. Keep stirring to prevent from burning.  Switch off the stove, and keep aside to cool.

To make the orange cream –

In a sauce pan, mix all the above ingredients and keep stirring untill thickened. It may take at least 5-6 minutres.

In a serving bowl, pour the above prepared rice pudding, and top it with the orange cream. Chill and just before serving garnish with  sliced almonds or any dry fruits of choice.

NOTES:-

Using Arborio rice is preferred, but you can use any short grain rice, or if nothing else use basmati rice.

I  have used less sugar, it gives a tangy sweet taste. If you prefer more sweetness, increase the amount of sugar.

Using orange blossom water, gives it the unique middle eastern exotic taste. If its not available, use rose water or even vanilla.
