It’s quick, it’s easy, and it’s healthy! what could be better than that on a mad morning rush hour.

Pita bread also known as khubz is popular and easily available bread in gulf countries, now all over the world. Falafel pita pockets are a common staple for breakfast , in these parts and one of our favourite at home. If you have the pitas, assemble whatever leftovers you have and create your own sandwich, with your favourite combinations. From boiled eggs, tuna, leftover tandoori or bbq meat, chicken to the vegetarian sprouts, carrots, cucumbers, pickled vegetables, celery, cheese………can be stuffed inside a pita, to make a healthy and filling breakfast.

Pita bread is served at just about every meal in the Middle East. It can be used for dipping, or to make delicious sandwiches in the pocket. In the Middle East, pita is made in brick ovens, where very high heat can be achieved. It is very hard to duplicate in a home kitchen, but i have seen many recipes for making it at home. If you are interested, may be you can try it. I have not tried making it, as long as living in the middleeast, its easily and very cheaply available. Can u believe it, for 1 sar we get 4 pitas. Mostly pitas made with APF are consumed more.  But for a healthier option try buying whole wheat pitas.

serves :4

  • 4 tsp – hummus / tahini
  • alfa alfa/ moong sprouts- 2 cups
  • 2 carrots- finely shredded
  • 2 cucumbers- thin,long strips
  • 4 lettuce leaves
  • 2 boiled eggs
  • handful of french fries
  • salt and pepper to taste

Fry or bake the french fries and keep aside. Warm the pita bread, slice them in half. Into each half, spread the hummus. Now, put in the sprouts to make a nice bed for the other fillings. Put in all the other fillings or ingredients of your choice into the  pitas. Seson with salt and pepper to taste and you have your meal!

If you google search for oreo recipes, you will be bombarded with oodles of cream, icecreamish oreo milk shake recipes. Mostly with scoops of vanilla ice cream or cream or even whipping cream. Theres nothing wrong with that, i know…..no one can say no to an ice cream :). But if you are one of those health concious person, or like me the diet bug has bitten you, then this shake is for you, assuming you count the calories in the cookies.

makes 2 large glasses

  • 2 full cups low fat milk
  • 1/4 tsp pure vanilla extract
  • 6 oreos
  • 1 medium frozen banana / small red apple
  • 2 tbs – honey

Adding frozen bananas, gives it a creamy texture like an ice cream. Remember the banana icecream recipe i posted earlier. If you dont have bananas substitute with a medium or small red soft apple. Not granny smith green apples pls. I tried both the version, and they were good.

In a food processor or blender add 4 oreo cookies, milk, vanilla extract , frozen banana and honey. Blend for one or two minutes, accordingly till smooth. Pour into two large glasses. Serve garnished with a crushed cookie on top of each glass. Enjoy !!!
