This is a very quick, easy one pot meal, which can be made in a jiffy ( if you have the basic ingredients- saffron and pomegranate) when some unexpected surprise guests attack you. Also it looks beautifull- presented with the pomegranate airils and aroma of saffron. And no, it does not taste like sweet rice or like thai pineapple rice. It is just the normal savoury rice pilaf with just subtle hint of sweetness when you bite the pomegranate airils.

The active components present in saffron have many therapeutic applications in many traditional medicines since long time ago as anti-spasmodic, carminative, diaphoretic.Research studies have shown that, safranal, a volatile oil found in the spice, has antioxidant, cytotoxicity towards cancer cells, anticonvulsant and antidepressant properties.Αlfa-crocin, a carotenoid compound, which gives the spice its characteristic golden-yellow color, has been anti-oxidant, anti-depressant, and anti-cancer properties.

  •     3 cups basmati rice
  •     1 tsp – good quality saffron
  •     3 tsp milk
  •     1/4 cup – olive oil
  •     1 tsp – black cumin/ shahi zeera
  •     4 cardamom
  •     4 cloves
  •     cinnamon
  •     1 green capsicum(optional)
  •     3 green chilies- finely sliced
  •     1 medium onion
  •     salt to taste
  •    1 large pomegranate to garnish

Wash and soak the rice and keep aside. Heat the milk, add saffron and keep aside. In a wide bottomed vessel, heat the extra virgin olive oil over medium heat. Add the whole garam masala (black cumin,cardamon,cinnamon,bay leaf). Add the finely chopped onion and green chilli and capsicum , and fry for a minute. Add 4 cups water( or according to your rice) , reduce heat to low and simmer, covered, for 5 minutes untill the water is boiling. Add the rice and cook covered on medium flame,  until the rice is cooked and all the water has been      absorbed. Sprinkle the saffron milk and close the lid and bake or give dum on very low fire for 5 minutes. Switch off the stove. Place the rice in a serving dish and scatter with the pomegranate seeds before serving.

Saffron has been used in combination with other herbs as a remedy for insomnia, coughing, flatulence, indigestion, and baldness. It also helps to lower the levels of bad cholesterol and triglycerides. Saffron can be applied topically as a paste to relieve dryness and other skin conditions.
