DATE AND ALMOND KHEER

This delicious sugar free, Ayurvedic dessert with few ingredients (dates, milk and almonds) is easy to prepare and tastes divine. I make lots of sugar free kheers and milkshakes at home for my kids and this is one of the must. Though it is not as thick as a kheer, this is in the consistency of  hareera.

Dates and almonds along with being tasty are nutritious. Just a handful of almonds a day helps promote heart health,lowers blood sugar and insulin,  prevents weight gain, increase intellectual level and  may even help fight diseases like diabetes and Alzheimer’s. Dates known to be thirst quenchers, body energizers, helps in improving digestive system, regulate healthy nervous system and also help in increasing levels of hemoglobin.

cooking time:- 15 minutes

INGREDIENTS:-

  • 15  dates – pitted and chopped finely
  •  handful of almonds – powdered to fine
  • 2 cups milk – Whole
  • 1 tablespoon ghee
  • 1/2 teaspoon cardamom powder
  • dry fruits to garnish (optional)
  • pinch of saffron (optional)

METHOD:-

Take a heavy bottomed vessel on stovetop and heat. Add ghee to melt. Add chopped dates and almond powder to the melted ghee. Fry for about five minutes on low heat. Add milk. On medium heat, simmer, stirring in between, until the milk-dates-almond mixture thickens and reduces in volume . Takes nearly ten minutes of cooking time. Keep stirring every minute ot so to avoid sticking up. Stir the cardamom powder. and sprinkle the saffron strands. Turn off the heat. Serve warm or chilled garnished with dry fruits.

NOTE:-

  • * If you have some left over dry dates, wash and take out the seeds. Soak them in 1 cup of boiled water for at least half an hour. and grind along with the almonds.
  • * The sweetness from the dates is enough, but if you are more sweet toothed, add some sugar or honey accordingly.

AVAGADO POUND CAKE

This is not any healthy cake recipe or sugar free, neither iam claiming it to be healthy like my other cake recipes. I just hate raw avagado smell, i wanted to try them in salads. But the smell would not let me, so tried baking it in a cake.

Like my spinach cake and beetroot cake, i could not detect the smell of avagado and it gave the cake such a beautiful pale grassy green colour. And tasted just moist and soft like a normal pound cake.

But do you know , avocado has been called the world’s most perfect food and has many health benefits.

Also called the alligator pear, avagado  is a high-fiber, sodium- and cholesterol-free food that provides nearly 20 essential nutrients, including fiber, is rich in healthy monounsaturated and polyunsaturated fats (such as omega-3 fatty acids), vitamins A, C, D, E, K and the B vitamins (thiamine, riboflavin, niacin, pantothenic acid, biotin, vitamin B-6, vitamin B-12 and folate) — as well as potassium.

INGREDIENTS:-

  • 1/2 cup olive oil
  • 1 medium ripe avagado
  •  1 cup sugar
  • 3 eggs
  • 2  cups all purpose flour
  • 1  teaspoons baking powder
  • a pinch of salt
  • juice of 1 large lime
  • 1 teaspoon vanilla
  • 1/2 cup milk

METHOD:-

  1. Take one medium sized avagado. Take out the flesh, add lime juice and grind in a food processor untill smooth.
  2. Preheat oven to 180 C, grease a medium bundt mold (any cake tin or loaf pan) and keep aside.
  3. In an electric mixer , add the sugar, oil. 
  4. Add the eggs, one at a time, beating well and scraping down the bowl sides after each addition. After all eggs are in, beat several minutes at high speed until the mixture is smooth and very pale. Beat in the avagado puree.
  5. Sift together flour, baking powder, salt . combine the milk and vanilla. Beating at low speed, add the dry ingredients , alternating with the milk mixture.
  6. Pour the batter into the prepared bundt pan, spreading evenly. Bake about 30 minutes or until the cake pulls away slightly form the sides of the pan and a toothpick or a skewter inserted near the center comes out clean.
  7. Cool the cake in the pan on a wire rack for 20 minutes. Loosen the sides with a knife, invert onto a rack, and cut into slices.Enjoy 🙂

NOTE:- To make it more healthy, try substituting  sugar with honey or sugar free. Do let me know how it turns out.
