THAI PINEAPPLE RICE

If you’re a fried rice fan, you’ll absolutely love this scrumptious Thai version of fried rice. Delectable in every bite, the flavours burst in a sweet-savory combination of pineapple and soy sauce, at other times you taste the spicy flavor of the rice together with the contrasting texture of nuts and vegetables.

This dish differs from Chinese fried rice in that it is prepared with Thai Jasmine rice instead of regular long-grain rice. It normally contains meat (chicken, shrimp, and crab are all common), egg, onions, garlic and sometimes tomatoes. The seasonings, which may include soy sauce, sugar, salt, possibly some chili sauce, and the ubiquitous nam pla (fish sauce), are stir-fried together with the other ingredients.. The dish is then plated and served with accompaniments like cucumber slices, tomato slices, lime and sprigs of green onion and coriander. This dish has many regional variants, as it is a widespread dish.

INGREDIENTS;-

  • 1 onion, diced
  • 2 cups basmati/jasmine rice
  • 2 cloves garlic, minced
  • 1 inch ginger,minced
  • 3 tsp olive oil
  • 1 medium sized carrot, diced
  • 1 medium sized red pepper diced
  • 1 medium sized green pepper diced
  • 1 cup of peas
  • 1 egg, scrambled
  • 2 green chillies,thinly sliced
  • 1 handful of chopped spring onions
  • 1/2 cup fresh/canned pineapple diced
  • 1 tablespoon soya sauce
  • 1 tbsp curry powder
  • 1/2 cup roasted whole cashews

METHOD:-

Cook the rice till done(adding a tsp of oil to keep the grains separate).Keep aside. Start with cutting all the veg and set them aside.
Cook scrambled eggs, set aside. Now in a large wok ,heat oil and add finely chopped  onion, ginger,garlic,green chili. Fry untill fragnant and slightly browned. Add carrot, pea,peppers & pineapple chunks. Drizzle the soy sauce mixed with curry powder over and gently stir-fry to combine over medium-high heat for about 5 to 8 minutes, or until the veggies are cooked. Add the rice,fry for a minute. Stir in salt,srambled eggs, taste for more or less sesonings and adjust accordingly. Garnish with the greens of spring onion, fried whole cashews and for a beautiful presentation, scoop out the inside of a pineapple and stuff the rice inside. Serve immediately.
