 SUMMER SPAGHETTI SALAD

Summer salads are quick and easy to make apart from being healthy, require minimal or no cooking, and are the perfect way to enjoy all the produce that’s in season now. Use whatever is in your kitchen or refregorator, not nessasarily what is mentioned in the recipe. This is what i used – a simple delicious salad with italian vinaigrette.

serves 4

Ingredients:-

  • 1/2 package spaghetti
  • 1 full cup -boiled chickpeas/garbanzo bean
  • 2 medium tomatoes- seeds removed and diced
  • 1 large cucumber, peeled,seeded and diced
  • 1 large green pepper, diced
  • 1 large carrot- peeled and diced
  • 1 small onion finely chopped
  • 1 cup – chopped parsley or fresh herbs
  • 2 cubes shredded  goat cheese or any other
  • 4 tablespoon – italian vinaigrette

METHOD:-

Cook spaghetti according to package directions , drain and rinse in cold water. Place in a large bowl, add all the other ingredients and combine.

Combine remaining ingredients; pour over salad and toss to coat. Pour salad dressing over top. Toss well to coat. Chill for at least 2 hours before serving.

Basic italian dressing :-  (add in more flavours according to your tastes). 

Ingredients:- 3 tsp olive oil, 1 tsp vinegar,salt,black pepper,1/2 tsp crushed gralic,1/2 tsp italian sesonings.

Shake all ingredients in a tightly-lidded container OR whisk together in a small bowl. Taste and adjust sesonings and dress salad as desired.

    I love the idea of a salad that uses up whatever I’ve got on hand – pasta salads are always tasty and filling and I like the addition of chickpeas…
