APPLE SOUP

Have you ever tired making soup with apples ?  Maybe some of you may already have but to those of you who have not, can try this yummy savoury soup. Came across this recipe in Martha stewards website. I just omitted the curry powder.(we indians have enough curry without it coming in soups too 🙂 ) but feel free to use and experiment.

A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don’t like. Try substituting one ingredient for another. Remember words have no flavour, you have to add your own!

INGREDIENT:-

  • 1 tablespoon olive oil
  • 2 shallots, minced
  •   1 inch piece- ginger(grated)
  •   2 Granny Smith apples, peeled, cored, and cut into 1-inch pieces
  • 1 small potato, peeled and cut into 1-inch pieces
  • 1 teaspoon coarse salt, plus more for seasoning
  • 3 3/4 cups homemade chicken stock/ water
  • 1/2 cup  milk
  • Freshly ground pepper
  • Sour cream, for garnish

METHOD:-

Melt butter in a medium saucepan over medium heat. Add shallots; cook until soft and translucent, about 2 minutes. Add ginger , cook, stirring, 1 minute. Add apples, potato, salt, and chicken stock. Bring to a simmer over medium-high heat, and cook until potato is tender when pierced with a paring knife, about 12 minutes. Remove from heat, and let cool slightly. Using a food processor or blender, puree just until smooth (do not overprocess). Return soup to pan; stir in milk and season with salt and pepper. Place over medium heat until soup is just heated through; do not let it boil. Divide soup among serving bowls, and garnish with sour cream/ crusted bread.
