DATE SESAME ROLLS

These  raw date balls are very simple to make and they have a surprise in the middle! They can also be served for breaking the  fast at traditional Ramadan “Iftar” meal. They’re soft and chewy but not sticky. If you are making it with old, dry dates, steam them for a few minutes. That should soften them up and  then roll into balls or rolls.

makes 7-8 rolls  time taken: 15 minutes

INGREDIENTS:-

  • 2 cup  pitted dates (about 25 dates)
  • 1 cup walnuts
  • 2 tablespoons honey(optional).
  • 8 almonds
  • 1/2 cup sesame seeds, (slightly rosted) for coating

METHOD:-

First in a pan, slightly roast the dry fruits whole which you are using for a few minutes.  I used hazelnuts in some and almonds in others. Keep aside to cool. In the bowl of a food processor combine dates and walnuts and process until finely chopped and sticking together, it may take about 1 minute. Mix in honey. You may only need it if you have dry dates. With fresh juicy dates,omit the honey.  With your hands, mold the shape of the dates mixture into  small rolls. This should be easy to do if they are soft, ripe dates. Take a single almond and puch it into the middle of the date roll so that it is completely covered.Repeat for all remaining date mixture. Fill a small bowl with sesame seeds. To add crunch and make the rolls more visually appealing, roll each one in sesame seeds untill coated and place on a plate. Let the rolls chill in refrigerator for 30 minutes before serving.
