AMAZING TURKISH SPINACH CAKE

While browsing on the net recetly,  came across this strange combination of spinach and lemon ! Eewee ( you may be thinking) but

                                                                                   … though it sounds yucky reading about this weird combination ( that too in a cake) i wanted to give this a try. Always up for experimenting healthy recipies and this cake looked vibrant enough to give it a chance. And green colour is very appealing to the eyes for me ( i cant say for others).  Though this is not a totally healthy cake with sugar( just half a cup) and APF,  although the recipie uses olive oil (a heart healthy oil) as a substitute for butter. But indulge and feel happy knowing that it is packed full of fibre (with bananas), calcium and spinach is filled with vitamin k and A. ( vit k is important for maintaining bone health. Vitamin K1 helps prevent excessive activation of osteoclasts, the cells that break down bone).

So while spinach probably won’t make you super strong the minute you eat it, as it did for Popeye, it will promote your health and vitality in many other ways. Apart from all this, people wont even notice it has spinach, untill you tell them. I made this for guests in ramzan – no one even guessed anything weird about this soft cake. May be they thought i was addicted to green food colour and used it in cake too :).

INGREDIENTS:-

  • 3 eggs
  • 1 tsp vanilla essence
  • 2 ripe bananas
  • 1/2 cup sugar
  • 8oz bag of (big leaf) spinach/ 1 cup puree,
  • 3/4 cup of olive oil
  • 3 tbsp lemon juice
  • zest of one lemon
  • 1 & 1/2 cups cake flour
  • 3 tsp baking powder
  • pinch of  salt

METHOD:

Remove stems from spinach if too thick or long. Puree spinach in food processor or blender till pureed and looks like baby food, takes a few minutes so be patient. Mash the bananas and keep aside.

Beat eggs and sugar till light and creamy. Add oil, lemon juice, rind,mashed bananas and  pureed spinach . Mix well.

In a separate bowl sift flour, baking powder, and salt.  and blend into spinach mixture for 1 minute. Pour into greased cake pan.

Bake at 350 for about 30 mins check with toothpick. Let cool in pan, when completely cool top with the your own frosting.

I have used butter cream frosting which i have used in other cake recipies before.

If you like you can make it in 2- 9 inch pans and layer the cake, or make cupcakes.

TIPS:-

* Use fresh not frozen spinach

* I wanted to cut down sugar so used ripe bananas, if you dont have/want, replace with 1 cup more sugar.

      Yes sure, but slightly increase the amount of sweetness you are going to add in the cake.
