Paya shorba or  soup is basically made from lamb trotters, the feet of a goat or lamb or any cattle, a rich gourmet food, consumed mostly by recuperating patients for its nourishment. This is especially famous among the muslim community, basically a mughlai dish, expensive  and widely popular among the riches(nawabs), who consume this soup  with meat and marrow cooked in exotic spices to get the full benefits and nourishing goodness.

It has numerous health benefits

  • strenghthens joints especially the spine.
  • Absolute wonder food for post delivery recovery.
  • Good for aging bones as its full of calcium.

    Ingredients :

  • 6 legs of lamb (paya) cut evenly
  • 2 medium onions quartered
  • 2 tsp pepper powder
  • 3 cloves
  • 5 cardamom
  • 1.5 inch stick of cinnamon
  • 1/2 tsp Turmeric
  • A bunch of chopped coriander leaves
    2 tsps of Ginger and Garlic paste
  • 3 green chillies
  • 2 tsp of oil
  • salt to taste
  • handful of cashews soked and made into paste /  or half cup coconut paste- (optional) . This is if you want the soup to be thick

    METHOD :-

    Clean the paya throughly with atleast 5 waters.
    Pressure cook lamb trotters or Paya with ginger garlic paste & turmeric in a cooker for 20 mins on high flame or till 10 – 15 whistles. In indian the trotters were cooked with 8-10 whistles as they were tender. But here in saudi arabia they seem to be tough like the citizens :), so need more time to handle.

    In a pan take two tsp olive oil and add the whole garam masala. Then after a minute add, finely chopped onions and green chillies . After the raw aroma goes add the cashew/ coconut paste. Roast for 2 minutes and keep aside. Now after letting off the the cooker and transfer the contents of the pan to the cooker and allow it to cook for in low flame for 5 mins… and add salt  and pepper . Adjust according to your tastes. Garnish with chopped coriander leaves.


    Goes well with iddiyappam,Idli,Dosai, parathas, chapattis or serve with rice too.
