SHAHI KOFTA CURRY/MEATBALLS GRAVY

Shahi kofta curry is a sinfully delicious Cuisine, from the mughal city of hyderabad. Here meatballs are simmered in a rich gravy of cashew or almonds along with mild spices.

INGREDIENTS :-

  • # mutton mince /boneless – 500 grms
  • # coriander leaves – 3 tsp
  • # Small onion – 1
  • # Ginger garlic paste – 1 tsp
  • # Garamasala powder – 1 tsp
  • # Green chillies – 4
  • # Cumin powder- 1/2 tsp
  • # Salt to taste
  • # Oil for frying

METHOD:-
Wash the minced meat well and squeeze out all the water, place in a mixing bowl. Finely chop the onion,coriander leaves and green chilli. Add to the minced meat, along with the other ingredients. Mix it well by adding salt and make small balls (koftas).
Place a skillet and add 4 cups of water,a tsp of oil and bring to boil.When water starts boiling gently add the koftas to the skillet, after 2 mins turn them andcook covered for 10 mins on med heat.
Keep them aside.

For the gravy…..

Ingredients :-

  • # 1 – large onion
  • # 2 – tomatoes
  • # 15 – cashews/ almonds(soaked for atleast half an hour)
  • # 1 inch – ginger /garlic
  • # 1 cup – coriander leaves
  • # 1 tsp – garam masala powder
  • # salt
  • # 1 tsp – chilli powder

METHOD:-
Dry roast the onions in a heavy bottomed pan for about 10 minutes until light golden. Grind into a paste with the garlic, ginger and half the coriander.Fry the ground paste on a low flame. Add 1 tablespoon of water fry till the raw smell goes away. Add the cashew almond paste. Puree two ripe tomatoes and saute with this . Add garam masala powder, chilli powder, salt and mix. Fry some more and bring to a boil. Add the koftas along with the water. Simmer on low flame. Do not cover. Cook until the curry reduces and thicker in consistency. ( for more thicker gravy, add 1 tsp coconut paste along with cashew paste). Serve with khuska, plain rice or roti.
