    KAJU KATLI

Kaju katli as the name suggests is a famous indian sweet made with just cashews and sugar. If we take care ,it is a simple and easy sweet to make within half an hour. In most muslim weddings these sweets are shaped into different fruits and vegetables and gifted to the groom from the bride’s parents on his first breakfast at their home. This is a very delicious sweet, no one can help eating another piece. Some like me, eat half of it before its even cooled 🙂 .

Ingredients:-

  • Cashew nuts (kaju) – 2 cups
  • Sugar – 1 Cup (Half the amount of Cashews)
  • Ghee
  • food colourings (optional)
  • water – equal amount to sugar (1cup)

METHOD:-

Dry grind the cashews without adding any water. In a sauce pan , put equal amount of water and sugar . Heat on a medium flame  to make sugar syrup (two thread consistency). Check for consistency upon boiling- this would roughly take 6-8 minutes. Lower the heat, add the cashew powder and stir continuously to avoid any lumps. Stir well for two minutes and immediately take it out .
Take the cashew syrup mixture on a  plastic sheet and wrap it .  knead it for at least 2 minutes and spread it on a greased plate /  plastic sheet and after half an hour cut diagonally into diamond burfi shapes and store .  or apply ghee on both of your palms and while its still hot, start moulding them into desired shapes and keep on a greased plate.
