Kharay seviya or indian vermicelli are thin, fine indian pasta. Different varieties like rice, wheat, finger millet are easil found in indian markets. My mom used to make this for breakfast along with eggs or vegetables, chicken or prawns. My favorite ones are , either with prawns or chicken. If you are a vegetarian replace chicken with tofu, paneer or peas and carrot. Experiment and add what you have at the moment in your kitchen.  Minced meat, prawns, mix vegetables, eggs, leftover chicken ……the list goes on.
