SAVOURY VERMICELLI (kharay seviya)

Kharay seviya or indian vermicelli are thin,fine indian pasta. Different varieties like rice,wheat,finger millet are easil found in indian markets. My mom used to make this for breakfast along with eggs or vegetables, chicken or prawns. My favorite ones are , either with prawns or chicken. If you are a vegetarian replace chicken with tofu,paneer or peas and carrot. Experiment and add what you have at the moment in your kitchen.  Minced meat, prawns,mix vegetables,eggs, leftover chicken ……the list goes on.


Serves 4. Cooking time : 20 mints

Ingredients :-

  • 2 cups vermicelli
  • 3 cups water
  • 2 big  tomatoes, chopped
  • 1onion, sliced
  • 1 green chilli, chopped
  • 3 eggs
  • 1tsp- garlic ginger paste
  • 1 tsp – chilli powder
  •   handful of coriander , chopped
  •   2 tsp of olive oil


Heat a pan at medium heat with oil and add chopped onion. After a while ,add the ginger garlic paste and fry for a minute. Add chilli powder . Fry for about 2 minutes. Add tomatoes, minced  meat or shredded chicken or paneer, salt. Mix well and let cook covered until the tomatoes are soft. Add water and cover.You can even add the eggs here .  Let it come to a boil. Once boiling, add the broken vermicelli and mix well.  Lower the heat to medium low. Add the eggs(do not mix after adding eggs)  and let cook until the pasta has absorbed all water. Garnish with fresh  chopped coriander leaves. Serve .
