PANZANELLA

Panzanella or panmolle is a Florentine salad of bread and tomatoes popular in the summer. It includes chunks of soaked stale bread and tomatoes, sometimes also onions and basil, dressed with olive oil and vinegar. It is also popular in other parts of central Italy.

Ingredients :-

  •  2 cups tomatoes – cut into large chunks
  •  2 cups stale crusty bread
  •   1 cucumber- chopped
  •   1/2 red onion- chopped
  •   1/2 cup pitted olives
  •   1/2 bunch fresh basil
  •   1/2 cup good olive oil
  •   Salt
  •  pepper

METHOD :-

In a salad bowl, combine the bread, tomatoes, cucumbers, red onions, garlic, basil . Add enough olive oil and vinegar to lightly coat, toss and serve with sesonings.

For more crunch and taste, add in any fruit of your choice. I have added an apple and some peaches. The combination was awesome.
