VEGETABLE CUTLETS

Vegetable cutlets are a  great healthy blend of  different vegetables and spices. These are great as an appetizer, afternoon snack with tea, or as a side dish with dinner, kids lunch box ideas.

Recipe makes 20 cutlets

Ingredients:

  • 3 medium potatoes
  • 1/2 cup  mixed chopped vegetables  each (green peas, green beans, corn)
  • 1/2 cup grated carrot/beetroot (beetroor gives beautiful reddish cutlets)
  • 2 tablespoons chopped cilantro (green coriander)
  • 2 finely chopped green chilies (adjust to your taste)
  • 1 teaspoon chopped ginger
  • 1 onion chopped
  • 1 teaspoon salt (adjust to your taste)
  • 1 cup breadcrumbs
  • Oil to fry

Method:

  1. Boil  and mash the potatoes, keep aside.
  2. Heat a non-stick kadai and add 1 tsp oil. Fry chopped onions and green chillies.
  3. Grind the mixed veg roughly for just 2 sec in a mixer ,add this to the kadai and fry.
  4. Add the grated beet along with ginger and salt. Sprinkle some garam masala(optional).
  5. Add the mashed potatoes and saute for 2-3 minutes. Add chopped coriander .Let cool .
  6. Make small balls, flatten and Shape into patties and coat with bread crumbs on both sides.
  7. Heat a skillet with 1 cup oil and shallow fry them on both siden till browned.
  8. Repeat this until all the cutlets are done. Serve hot along with tomato ketchup.

NOTE :-

You can make the cutlets a little bigger and place them between a bun for a  veggie burger.

These can even be made before and frozen 2-5 days before a large party or gathering. Just defreeze them, roll into breadcrumbs and fry.
