    BEETROOT KHEER

This is  a simple,easy beetroot kheer which i made this weekend. It does not have the smell and taste of beets though and is really good. 

serves: 6                                         cooking time : 20 minutes

Ingredients

  • Beetroot – 1 small (grated)
  • sugar – 1/2  cup
  • coconut  – 1 cup
  • milk – 1 glass
  • wheat semolina (rava)- 2 tsp
  • dry fruits for garnishing
  • cardamom powder – 1/2 tsp

METHOD:

Take a kadai and add grated beetroot . cook it on slow flame till all the water from the beets is dried up. Till then , on another burner boil milk , add sugar and semolina and stir, now and then (to prevent burning). Add this to the beetroot along with grated fresh/ dry coconut. and cardamom powder. cook for 3 more minutes . Serve chilled garnished with some dry fruits of your choice.
