                                                   FRIED   RICE    WITH   OLIVES

Olives have been known to be mentioned seven times in Quran and their health benefits have been reported since prophetic times.

The olives like dates holds great value in ancient and modern culture. More attention has been given to their delicious oil than the fruit. Olives are unusual in their fat quality, because they provide almost three-quarters of their fat as oleic acid, a monounsaturated fatty acid. (In addition they provide a small amount of the essential fatty acid called linoleic acid, and a very small amount of alpha-linolenic acid, an omega-3 fatty acid.) The high monounsaturated fat content of olives has been associated with reduced risk of cardiovascular disease.

 We use olives in pizza’s , salads, sandwiches, cookies, so why not have it with  rice.

  Some of the known health benifits of olives:-

  •      Eliminates excess cholesterol in the blood.
  •      Control blood pressure.
  •     Source of dietary fiber as an alternative to fruits and vegetables.
  •      Vitamin E, which in turn provides that:
  •      Because it acts as an antioxidant, protecting cells
  •      By reducing the degenerative diseases like Alzheimer’s, benign and malignant tumors, including less serious    varicose veins and cavities,
  •  Because it prevents blood clots that could lead to a myocardial infarction or deep vein thrombosis (DVT)
  •  Because it protects cell membranes against diseases like cancer
  •  it is a good protection against anemia,
  •  Because it enhances fertility and reproductive system
  •  It is an excellent healing,
  •  Because it plays an important role in maintaining healthy immune system, especially during oxidative stress and chronic viral diseases,
  •  (And is being studied their impact on the prevention of cataracts). They are an aphrodisiac, just look at the number of prescriptions that have this feature olives.

Serves: 6                                                  cooking time 35-40 minutes

Whenever I make fried rice I add olives and it tastes great. This is my version of fried rice. If you are a vegan just omit eggs and chicken.

INGREDIENTS

  • RICE – 3 CUPS
  • EGGS- 2
  • BONELESS CHICKEN – 100 GRMS
  • CABBAAGE CHOPPED – 1 CUP
  • CARROT (GRATED/CHOPPED) – 1 CUP
  • CAPSICUM- 1 SLICED FINELY
  • BEANS – 1 CUP CHOPPED
  • ONION- 1 CHOPPED
  • OLIVES – 1 HANDFUL
  • PEPPER
  • SALT
  • SOY SAUCE- 1 TSP
  • OLIVE OIL – 2 TSP

METHOD:

Wash and soak basmati rice for an hour and cook. Cool and keep aside. Heat a broad pan and heat up olive oil. Add the chopped onions and cook. Cut the chicken into thin strips and fry for 5 minutes.

                                 Add the carrot, cabbage, beans and cook till they are 3/4 done. Add the chopped capsicum and olives. Heat a non-stick pan. Beat two eggs in a bowl along with pepper and salt. And pour in the pan with little oil. Keep stirring and scramble the eggs. Cook and keep aside. Mix this with the rice and adjust salt and pepper.

You can even add 3 green chillies in place of pepper powder. Stir in soy sauce and cook for a minute. Transfer all this to the cooked rice and mix. Eat hot.
