While  surfing food blogs for new recipies i came across this cute, mouthwatering apple muffins in umm maimoonah’s blog . They looked so easy and simple to make that i wanted to bake them the same day. But what with kids and  house ….i had no time. Only after they slept at midnight was i free and got up … baked this muffins till 2 am.  One first  look at them sitting in the oven  and they were worth all the effort . They are absolutely drool worthy not only to look but in taste too….. I tweaked the original recipe and added whole meal , omitted eggs and added chopped apples and buttermilk instead. You can make any of your simple muffin recipe and decorate with this apple roses

preparation time 10 minutes                    cooking time 25 minutes

  •  white whole wheat flour – 1and 1/2 cups
  • sugar – 1/4 cup
  •  apples – 3
  • vanilla essence – 1 tsp
  • olive oil / butter – 2 tsp
  • baking powder – 1tsp
  • thick buttermilk- 1/2 cup
  • lemon juice – 1 tsp

  1. Take 2 apples. Cut in half, deseed them and cut in thin slices with skin . Add ½ tsp  of butter in a pan add the sliced apples along with a tsp of water and cook it until softened.  Add a tsp of lemon juice.  Let it cool down for a while.
  2. Take the  remaining whole apple . peel and chop it finely.
Sift the flour, baking powder and soda in a large bowl, add the sugar to this mixture and mix well. Add the chopped apple to the flour mixture and mix it well to coat the apples with flour mixture. Add the melted butter or oil and mix. Beat the buttermilk, vanilla essence .and mix again.
  3. Preheat the oven to 180 degree Celsius.  Grease the muffin tray with butter. Or if u are using the silicon muffin cups , no need to grease. Spoon the mixture into the  Cups.
  4.  Start making the floral shapes to place on top of the muffin batter .
  5. Take the sliced and cooked apples and  start gently folding them ………like rose petals. And make a rose flower shape with the petals in your hand and gently place it on top of the mixture. No need to press it.
  6.  Bake the muffins in the preheated oven for 20- 25 minutes.  Carefully insert a skewer on the side to check if they are  cooked.  Remove  from the oven, let cool down for 5 minutes in the cooling rack.  Serve them warm.
