      CARROT SOUP

This is a very simple, healthy and delicious carrot soup. Apart from being the richest source of vitamin A Carrots are best known for their supply of the antioxidant nutrient : beta-carotene.  but also contain of a wide variety of antioxidants .

 Some of the known benefits of vegetable soups are :

  1.     Low in saturated fat ( use olive oil)
  2.     Great for sick people and those who have trouble chewing, digesting or are recuperating from an illness.
  3.     Great during dieting periods or if you want to lose weight quickly .
  4.     Thick soups (especially those that contain pureed vegetables, or eggs can be used as main dishes and are a great way to get more veggies into your diet.

INGREDIENTS:

  •   2 large carrots  –  chopped
  •  1 onion  –  chopped
  •  1 tst fresh ginger –  grated/ 2 cloves or garlic
  •  2 tsp – ground black pepper
  •  2 potatoes –  chopped
  •  2 cups vegetable stock
  •  salt
  •  1 tsp – olive oil
  •  parsley for garnishing
  •  ream (optional)
  •  2 slices- bread

Method:-
                   Heat olive oil in a pressure cooker and add chopped garlic / grated ginger, add chopped onions and saute. Add the potatoes and carrots along with the  vegetable stock water and salt. Give 4 whistles and switch off the stove. After its cooled , puree the soup in a blender and simmer again gor 5 minutes. season with freshly ground pepper and adjust salt.  Garnish with chopped parsley and cream (optional). Serve hot with fresh crusty bread.
