Turai or ridgegourd as its known in english is a well beloved vegetable of many households in india.

Ridge gourd is loaded with nutrients such as dietary fiber, vitamin C, riboflavin, zinc, thiamin, iron and magnesium. It is also low in fat and calories.
Being low in saturated fat and cholesterol and high in dietary fiber, it becomes the ideal choice for anyone who wishes to lose some weight quickly. It also has a very high water content, making it a very low calorie vegetable.· It has excellent cooling properties.
My mom used to make this yummy ridgegourd egg gravy  and we  very much loved it.    Omit egg if you are a vegetarian, tastes good even without it. 


  • Ridgegourd – 1/2 kg
  • eggs – 4
  • oil – 2 tsp
  • salt
  • onions – 1 large
  • ginger garlic paste- 1 tsp
  • chilli powder – 1 tsp
  • coriander powder – 1/2 tsp
  • garam masala powder –  1/2 tsp
  • tomatoes – 2 ripe
  • coriander leaves for garnishing
Method : 
Heat oil in a cooker and add the chopped onions. Fry till they are golden add ginger garlic paste. Fry for a minute. Add finely chopped tomatoes and the garam masala, chilli and coriander powders along with salt. Add the peeled and chopped ridgegourd. add 2 cups water. If you are cooking without eggs just add 1 cup of water.
             This vegetable in itself retains more moisture and water content . Close the lid and pressure cook for 4 whistles and switch off the flame. After the pressure is gone, take off teh lid and add 4 eggs . Dont stir it. Just cook on low flame for 10 minutes or till the eggs are cooked. Garnish with chopped coriander leaves. Serve hot with phulkas, chappatis or rice.
