COCONUT CHUTNEY

I have posted dosa recipies without any dips. So here are some chutneys and sambar to be had with dosa and idli.

Ingredients:-

  • coconut – 1/2 cup
  • greenchillies- 3
  • salt – 1 tsp
  • gram dal or putana- 1 cup

To temper:

  • 1 tsp mustard seeds
  • 1tsp urad dal
  • few curry leaves

Method ;

Grind together coconut,green chillies , gramdal,salt . Grind into a smooth paste adding a little water and set aside. Heat a pan with oil and temper with the ingredients given under tempering and add this to the coconut paste .

 

SAMBAR

This is a simple sambar recipie for having with dosa and idli’s .

Ingredients:

  • 1/2 cup toor dal/arhar dal
  • 1/2 teaspoon salt
  • 1/4 teaspoon turmeric (haldi)
  • 2 tsp tamarind
  • 2 tablespoons oil
  • 1/2 teaspoon cumin seeds (jeera)
  • 1/8 teaspoon fenugreek seed (methi)
  • 1/4 teaspoon mustard seeds (rai)
  • Pinch of asafetida (hing)
  • 10-12 curry leaves
  • 1/2 teaspoon salt
  • 7/8 green chillies
  • 2 large tomatoes
  • 2 cups mixed vegetables of your choice(onion,carrot,radish)
  • 1 tablespoon sambar powder, available in any Indian grocery store or homemade

Method

Wash and soak dal in about 2 cups of water for 10 minutes or longer.   In pressure cooker add soaked dal, about 2-1/2 cups of water, salt and turmeric, green chillies ,tomatoes then cook on medium high heat.for 5 or 6  whistles. After the steam goes off ,with the help of a laddle softly mash the dal.

      Heat the oil in a saucepan. Add cumin seeds, mustard seeds, fenugreek seeds, asafetida, red chilies, and curry leaves, and then stir for a few seconds .Add onion  vegetables, sambar powder, tamarind pulp and ½ cup waterCovered the pan and let the vegetables cook till they are tender over medium heat. If the sambar is thick, add water as needed. Cook sambar on low heat for 10-15 minutes.

Serve with dosa, idli, rice or with any meal as a side.
