CHICKEN CHETTINAD

This is a cuisine of chettinad region of tamilnadu from south india. Chettinad cuisine is known to be one of the most aromatic and spiciest cuisine of india.

Image,serves : 5    cooking time : 30 minutes

Ingredients ;-

  • chicken – 1/2 kg cleaned and washed
  • oil- 2 tsp
  • onions – 2 small (chopped)
  • tomatoes- 4 medium (chopped)
  • red chilli powder – 1 1/2 tsp
  • turmeric – 1/2 tsp
  • ginger garlic paste – 1 tsp
  • lemon juice – 2 tsp / curd – 1/2 cup
  • coriander leaves

masala :

  • cinnamon- 4″ piece
  • cloves- 2
  • cardamom- 3
  • coconut – 1 cup
  • poppy seeds – 1 tsp
  • coriander seeds- 1 tsp
  • cumin seeds – 1 tsp
  • curry leaves- haldful
  • fennel seeds – 1/2 tsp

METHOD:
                  Roughly chop the onions and dry roast them in a pan till the  raw smell goes away. It may take 3….4 minutes. Take it out and keep them aside. Put a little oil in the pan and roast all the masala ingredients for 3 minutes. Grind this along with the onions. Take  awide bottomed vessel , put 2 tsp cooking oil  and fry the gingergarlic paste. After it is browned add chillipowder and turmeric. Adding chillipowder in the hot oil gives it the distinctive rich red colour , add the chicken pieces with salt and cook till the water from the chicken is almost dry. Add the masala paste and finely chopped tomatoes .
Add the  curd and cook on low flame for 15…..20 minutes till the chicken is done. If you are using lemon juice add it after u switch off the stove. Garnish with coriander leaves.

Serve hot with chappatis / pita bread/ rice.
