ORANGE PULAV

Orange in a pulav. I recently heard about it and wanted to give it a try. Their’s just this subtle hint of orange flavour in this unique pulav.

serves : 4                  cooking time : 30 mnts

Ingredients :-

  • Oranges – 2
  • Basmati rice – 2 cups
  • Olive oil – 2 tsp
  • Green chillies 4
  • 1 cup coconut milk
  • whole garam masala
  • onions –  2
  • 2 carrots
  • handful of peas
  • Almonds- 5
  • Ginger garlic paste – 1tsp

METHOD :-

Heat the oil in a wide pan and add the whole garam masala and almonds. Fry onions and green chillies and after they have browned add ginger garlic paste. Add the grated garlic and peas. Take the juice from the two oranges and keep aside. Wash the peels and grate them or with the helpof a scraper thinly scrape 2 tsp orange zest. Add the zest and salt . Add the coconut milk and water , in that add the rice. after it is 3/4th done add the orange juice. Close the lid and give dum. Serve with cucumber raita and side dish.
