BANANA MANGO CAKE

This is my first sucessfull attempt at baking. Iam an early beginner in baking basics so i almost fully adapted the recipie word by word from ‘ the web ‘ except some slight changes.

makes 1 loaf of bread

Ingredients

  • All purpose flour – 1&1/2 cups (i took 1 cup whole wheat and half cup all purpose flour)
  • sugar – 3/4 cup
  • baking powder – 1 & 1/2 tsp
  • salt 1/4 tsp
  • butter 1/2 cup (i took half cup olive oil)
  • mashed mango and banana puree – 1/2 cup
  • eggs- 2
  • vanilla extract – 1/2 tsp
  • nuts- few( i added pistachios)

METHOD: –

Preheat the oven to 350 f. In a bowl mix flour,salt,baking soda,baking powderand whisk. Make a dent in the middle add the beaten egg,melted butter and pureed mango and banana mixture, vanilla extract. Gently fold using a spatuala. Add the nuts and fold again.  Take a bread loaf and grease it with butter and sprinkle flour. and pour the batter. Bake for 35 to 40 minutes or till a toothpick inserted comes clean.

Though the crust was a bit browned ……it was delicious. and our house was filled with the sweet smell of baking ( nt burnt like my failed attempts).  Actually it was mildly sweet like fruit milk bread and we had it for breakfast with warm milk.
